Summary

Production Chefs are likely to work with centrally- developed and standardised recipes/ menus, often producing food in high volumes. They apply highly methodical organisational skills, energy, accuracy and attention to detail, and are mindful of the importance of sustainability and protecting the environment.

Course content includes:

  • Techniques for the preparation, assembly, cooking, regeneration and presentation of food.
  • Safe handling and use of tools and equipment.
  • How to adapt dishes to meet specific dietary, religious and allergenic needs.
  • How to use effective methods of communication to promote a positive image of yourself and the organisation.
  • How personal development and performance contribute to the success of the individual, team and organisation.
  • Maintaining quality and consistency by using resources in line with organisations’ financial constraints, style, specifications and ethos.
  • Legislation, governance, standards and regulations.
  • Sustainability, waaste control and conisderation of the environment.

You will complete the Level 2 Production Chef Apprenticeship Standard.

  • This apprenticeship will involve college attendance and off the job training.
  • You will also develop your knowledge, skills and behaviours.
  • You need to have an employer to support your apprenticeship and be employed in a relevant job role.
  • The typical length of this apprenticeship is 15- 18 months.

Entry Requirements

  • GCSE Grade 2/ E in Maths and English (Language or Literature) or Level 1 Functional Skills in Maths and English
  • Candidates who have achieved English and Maths at Level 1 (3-2/ D-E at GCSE or Functional skills Level 1) will have to attend college until they are able to attempt Functional Skills exams at Level 2. Functional Skills sessions are timetabled on a separate day and require attendance.
    To enrol onto this apprenticeship, you need to be employed in a relevant job role and undertake a range of tasks which would enable you to complete the apprenticeship qualification. An appropriate job role may be responsibility for running a specific section of a kitchen or managing a small team of staff.

Learning Outcomes

Upon successful completion of the course, learners will be awarded with a Level 2 Production Chef Apprenticeship Standard, which includes the following:

  • Level 2 in Food Hygiene and Safety.
  • If not previously achieved or exempt, Level 1- 2 in English and Maths.

Assessment

Training and assessments are delivered in the workplace and in college. Apprentices will be required to attend college-based sessions as part of their training, whilst also completing off-the-job training in the workplace. You will also complete assessments and observations in the workplace.

At the end of the apprenticeship you will complete an End Point Assessment (EPA) which consists of:

  • 60- minute multiple- choice knowledge test, consisting of 30 questions
  • 2- hour practical workplace observation including questions from an independent assessor
  • 40- minute professional discussion with an independent assessor

The overall achievement is determined by the independent assessor based on the combination of performance in all EPA methods.

Progression

On successful completion you could progress onto a Level 3 apprenticeship, such as the Level 3 Chef de Partie standard. Alternatively, you could progress further by studying other qualifications or courses.

Career Progression

Successful apprentices may also wish to consider further skills or a specialism, such as a Pâtissier, Baker, Butcher, or becoming a Team Leader. With further experience, apprentices may also wish to create their own business or pop- up outlet.

Fees

Apprenticeship course fees are subject to the age of the apprentice, and the size of the company.

For employers with less than 50 employees who do not pay the apprenticeship levy and who take on an apprentice who is aged between 16-21 at the start of their apprenticeship, there will be no direct cost and the full training costs will be covered by Government funding. If the apprentice is aged 22+ the government partially subsides the training costs and the employer will need to pay 5% of the costs. In the case of this course, the fee would be £300.

For an employer with more than 50 employees a 5% charge will be implemented regardless of the age of the apprentice which in this case would be £300.

A levy paying company will pay the full cost of the apprenticeship from their levy account which in this case would be £6,000.

Please note that course fees are to be paid by the employer and apprentices must not be asked to make a financial contribution toward their training.
