Summary

A Chef de Partie is responsible for running a specific section of the kitchen. This type of chef usually manages a small team of workers, which they must keep organised so that dishes go out on time and the work area remains clean and orderly. However, in smaller kitchens a Chef de Partie may work independently as the only person in their section. Also known as a Station or Section Chef, the Chef de Partie reports to the Senior Chef and plays a very important role in any kitchen.

Course content includes:

  • Industry and food trends, customer preferences and environmental factors that influence dishes and menus
  • Food safety practices and procedures to ensure safe preparation and cooking of food
  • How to work with people from a wide range of backgrounds and cultures
  • Understand the principles of supply chain management
  • Brief, coach and motivate others to produce high quality dishes and menu items which are delivered on time and to standard
  • Advocate the importance of working safely and legally in the best interest of all people

You will complete Level 3 Chef de Partie Apprenticeship Standard.

  • This apprenticeship will involve college attendance and off the job training.
  • You will also develop your knowledge, skills and behaviours.
  • You need to have an employer to support your apprenticeship and be employed in a relevant job role.
  • The typical length of this apprenticeship is 18 months.

Entry Requirements

  • GCSE Grade 4/ C in Maths and English (Language or Literature) or Level 2 Functional Skills in Maths and English
    To enrol onto this apprenticeship, you need to be employed in a relevant job role and undertake a range of tasks which would enable you to complete the apprenticeship qualification. An appropriate job role may be responsibility for running a specific section of a kitchen or managing a small team of staff.

Learning Outcomes

Upon successful completion learners will be awarded with a Level 3 Chef de Partie Apprenticeship Standard.

Assessment

Training and assessments are delivered in the workplace and in college. Apprentices will be required to attend college-based sessions as part of their training, whilst also completing off-the-job training in the workplace. You will also complete assessments and observations in the workplace.

At the end of the apprenticeship you will complete an End Point Assessment (EPA) which consists of:
Parts 1- 3 can be competed in any order:

  1. 50- minute multiple- choice knowledge test
  2. 3.5- hour practical observation with an independent assessor, including questions
  3. 90- minute professional discussion with an independent assessor

Progression

On successful completion you could progress further through studying other qualifications or business-related courses.

Career Progression

Progression from this apprenticeship is expected to be into a senior culinary chef role, such as Chef Patron, Development Chef, Head Chef or Executive Chef.

Fees

Apprenticeship course fees are subject to the age of the apprentice, and the size of the company.

For employers with less than 50 employees who do not pay the apprenticeship levy and who take on an apprentice who is aged between 16-21 at the start of their apprenticeship, there will be no direct cost and the full training costs will be covered by Government funding. If the apprentice is aged 22+ the government partially subsides the training costs and the employer will need to pay 5% of the costs. In the case of this course, the fee would be £500.

For an employer with more than 50 employees a 5% charge will be implemented regardless of the age of the apprentice which in this case would be £500.

A levy paying company will pay the full cost of the apprenticeship from their levy account which in this case would be £10,000.

Please note that course fees are to be paid by the employer and apprentices must not be asked to make a financial contribution toward their training.
