Summary

This qualification is for you if you are 16 or over and are working towards becoming a chef in a professional kitchen. You have previous experience and relevant level 3 qualification in cookery, which this qualification will build on. On completion of this qualification candidates may progress into employment or higher qualifications:

  • Higher education
  • Level 4 Diploma in Culinary Arts
  • Level 4 Hospitality Manager Apprenticeship.

Advanced skills and techniques in producing vegetable and vegetarian dishes

Entry Requirements

Level 3 Diploma in Advanced Technical Cookery

Objective

This course allows candidates to practice and develop their skills. In addition it can be used as a preparation for developing a specialism, such as becoming a Pastry Chef.

Assessment

Practical and theory assessments

  • 8 individual practical tasks throughout the year.
  • 2 multiple practical tasks assessments at the end of the year: 1 in Kitchen/ larder and 1 in pastry
  • Nine underpinning knowledge short answer tests.
  • Three written assignments

Progression

This qualification is designed to help you enter employment with higher level of responsibility or at a more prestigious establishment. On completion of this qualification candidates may progress into employment or higher qualifications:

  • Higher education
  • Level 4 Diploma in Culinary Arts
  • Level 4 Hospitality Manager Apprenticeship.
