What You Will Study
If you are aged 16 or over and working towards becoming a chef in a professional kitchen, this course is for you! You will need to have previous experience and a relevant Level 3 qualification in cookery, which this qualification will build on.
You will cover the following units:
- Supervisory skills in the hospitality industry
- The principles of food safety supervision for catering
- Practical gastronomy
- Advanced skills and techniques in producing vegetable and vegetarian dishes
- Advanced skills and techniques in producing meat dishes
- Advanced skills and techniques in producing poultry and game dishes
- Advanced skills and techniques in producing fish and shellfish
- Produce fermented dough and batter products
- Produce petits fours
- Produce paste products
- Produce hot cold and frozen desserts
- Produce biscuit cake and sponges
- Food product development

Entry Requirements
You will need to have achieved a Level 2 Diploma in Professional Cookery.
How You Will Be Assessed
You will complete both practical and theory assessments throughout the course:
- Eight individual practical tasks throughout the year
- Two multiple practical task assessments at the end of the year: one in kitchen/larder and one in pastry
- Nine underpinning knowledge short answer tests
- Three written assignments
Course Progression
This qualification is designed to help you enter employment with higher level of responsibility or at a more prestigious establishment. On completion of this qualification you may progress into employment or higher qualifications:
- Higher education
- Level 4 Diploma in Culinary Arts
- Level 4 Hospitality Manager Apprenticeship
Fees
If you are a UK or home fee status student and aged 16-18 on the 31st August before the start of your course, tuition fees are free. If you are aged 19 and over please contact the Advice Shop.
