What You Will Study

This qualification is for you if you are 16 or over and are working towards becoming a chef in a professional kitchen.

You will need to have previous experience and a relevant Level 3 qualification in cookery, which this qualification will build on.

Units you will cover include:

  • Supervisory skills in the hospitality industry
  • The principles of food safety supervision for catering
  • Practical gastronomy
  • Advanced skills and techniques in producing vegetable and vegetarian dishes, meat dishes, poultry and game dishes and fish and shellfish dishes
  • How to produce fermented dough and batter products
  • How to produce petits fours
  • How to produce paste products
  • How to produce hot cold and frozen desserts
  • How to produce biscuit cake and sponges
  • Food product development

On completion of the course, you could progress into employment or higher qualifications such as a Level 4 Diploma in Culinary Arts, Level 4 Hospitality Manager Apprenticeship or other higher education routes.

Entry Requirements

Progression from Level 2 Diploma in Professional Cookery.

How You Will Be Assessed

You will be assessed through practical and theory assessments:

  • Eight individual practical tasks throughout the year.
  • Two multiple practical tasks assessments at the end of the year: one in kitchen/larder and one in pastry.
  • Nine underpinning knowledge short answer tests.
  • Three written assignments.

Course Progression

This qualification is designed to help you enter employment with higher level of responsibility or at a more prestigious establishment. On completion of this qualification candidates may progress into employment or higher qualifications.

Where Your Course Can Take You

You could undertake further learning or move into roles working as a chef or specialist chef in restaurants or hotels.

Fees
