What You Will Study

Our Hospitality and Catering Year 1 course will provide you with an introduction to the professional kitchen.

You will have the opportunity to explore a range of cooking methods and dishes, with practical assessments which will help to provide evidence of your achievement. There will also be the opportunity for you to gain experience in one of our operational areas, developing your work skills and experiencing some front of house elements including customer service and counter service styles in our Debut Café.

You will cover a range of topics including food safety, health and safety, introduction to healthier foods and an introduction to kitchen equipment. Some of the cooking methods and foods you will prepare include roast chicken with all the trimmings, savoury braised rice dishes, poached fish dishes, and baking a variety of breads to professional standards.

Entry Requirements

You will need to achieve three GCSEs at grade 3 or above. You many also need to complete your English language and maths qualifications with us at college.

How You Will Be Assessed

There are formative practical assessments throughout the year and two practical exams in the spring term, which will provide you with the chance to demonstrate your abilities. There are also four theory assignments that need to be completed along with some question test papers. You will work towards a Pass, Merit or Distinction grade.

Course Progression

Successful completion of this course could support you to progress onto a Diploma in Professional Cookery.

Where Your Course Can Take You

You could consider working in a small professional kitchen with a supportive team, a café, bakery or similar where you can use the skills that you have learned.

Fees

If you will be under 19 years old on the 31st August which falls prior to the start of your course, your registration and tuition fees will be funded by the Government. Chef’s whites, knives and food service uniform (costing approximately £205) will need to be self-funded. Financial support may be available - depending on personal circumstances.
