Production Chef Apprenticeship Level 2 Standard

Production chefs are likely to work with centrally developed standardised recipes and menus, producing food often in high volumes. They apply highly methodical organisational skills, energy, accuracy, attention to detail and are mindful of the importance of sustainability and protecting the environment.
Course Content includes:
- Techniques for the preparation, assembly, cooking, regeneration and presentation of food.
- Procedures for the safe handling and use of tools and equipment.
- The scope and methods of adapting dishes to meet the specific dietary, religious and
- allergenic needs of individuals.
- How to use effective methods of communication with all colleagues, managers and
- customers to promote a positive image of yourself and the organisation.
- How personal development and performance contributes to the success of the individual, team and organisation.
- Maintain quality and consistency in food production by using resources in line with organisations’ financial constraints, style, specifications and ethos.
You will complete the Level 2 Production Chef Apprenticeship Standard.
- This Apprenticeship will involve college attendance and off the job training.
- You will also develop your knowledge, skills and behaviours.
- You need to have an employer to support your Apprenticeship and be employed in a relevant job role.
- The typical length of this Apprenticeship course is 12 months.

Hands on learning
We work closely with employers to deliver training both on and off the job. In most cases, you’ll come into college one day a week, as well as getting planned training and development with a mentor in the workplace
- Entry requirements will be set by individual employer,
- Level 1 Functional Skills in Maths and English, or equivalent qualifications
- In order to enrol onto an Apprenticeship, you need to be employed in a relevant job role and undertake a range of tasks which would enable you to complete the Apprenticeship qualification.
For the full Apprenticeship, candidates will complete:
- Level 2 Production Chef Apprenticeship Standard
- Level 2 Functional Skills in English
- Level 2 Functional Skills in Maths
Training and assessments are delivered in the workplace and in college. Apprentices will be required to attend college-based sessions as part of their training, whilst also completing off-the-job training in the workplace. You will also complete assessments and observations in the workplace.
You will need to complete Level 2 Maths and English before End Point Assessment.
At the end of the Apprenticeship you will complete an End Point Assessment which will comprise of:
- 60-minute (including 10 minutes reading time) on-demand test, 30 multiple-choice based questions
- 2 hour practical observation in the workplace, followed by question and answer session
- 40 minute professional discussion with independent end point assessor.
On completion of parts 1-3:
- Independent end-point assessor confirms that each end-point assessment method has been completed
The achievement is determined by the independent end-point assessor based on the combination of performance in all end-point assessment methods.
On successful completion you could progress onto a Level 3 Apprenticeship, including the Level 3 Chef de Partie Standard. Alternatively, you could progress further through study of other qualifications or courses.
Career or academic progression may include continuation, development or promotion at work or within this sector and progression into higher education.
Apprenticeship course fees are subject to the age of the apprentice, the payroll of the employer and the number of employees. Course fees are paid by the employer and not the apprentice. Employers who take on an apprentice aged between 16-18 years old, or with an Educational Health Care Plan, will receive an Incentive Payment to help cover their costs.
