Love the fresh and delicious flavours of fresh fish and seafood but lack the confidence to cook them? This 5-week course will guide you from basic fishmongery and seafood preparation to creating restaurant quality dishes at home. Learn the skills and techniques to combine precision cooking with classic sauces and delicious accompaniments to wow your friends and family.
Week 1. Filleting and cooking round fish
Dishes:

Baked whole mackerel with bay, garlic and paprika and wholegrain mustard potato salad

Pan-fried sea bass with fennel and white wine sauce.
Week 2. Fish pie and classic sauces.

Fish pie with a spring green vegetable medley.

Watercress, parsley and lemon and dill sauce demo
Week 3. Seafood cookery.

Tempura king prawns with mirin and soy dipping sauce

Pan-fried scallops with pea purée and crispy pancetta
Week 4. Preparing and cooking flat fish

Breaded plaice with sauce vierge
