Summary: 

This course is designed to develop the highest level of craft skills in cookery for application within the home, small business, education and industry. 

You will learn a wide range of skills, which will enable you to select and prepare a variety of dishes and develop an understanding of the factors that influence choice of foods.

Entry Requirements: 

Successful completion of City & Guilds Certificate in Culinary Skills 332-03 or an equivalent qualification/experience.

Core Skills: 
  • To develop discriminatory skills in the selection, cooking and presentation of food and food products.
  • To develop an understanding of the application of scientific principles in cookery.
  • To be aware of current theories and dietary trends which affect attitude and practice.
  • To develop for personal or vocational reasons, a high standard of advanced cookery skills.
Assessment: 

The three assessments, over two years, are progressively structured. Emphasis is placed on different skills in each of the three assessments; therefore the mark scheme will vary between each assessment.

Career Progression: 

As well as using new-found skills for their own satisfaction, students who have completed this high level course have:

  • progressed onto one of the leisure courses e.g. sugarcraft 
  • moved into employment within catering
  • set up their own business
  • made a career in teaching (with additional teaching qualification)
  • gone on to study in higher education
Full Description: 

This advanced course will introduce you to a range of advanced cookery techniques.

  • Meat/fish/poutry/game preparation and cooking
  • Advanced pastries
  • Enriched bread doughs
  • Emulsified sauces

As part of the assessment criteria you will develop skills which will enable you to plan and cost for functions/celebrations/events.

2010/2011 fee - £675 per annum 2011/2012 fee tbc
Costs: 

There is a weekly food cost of £3.50 to cover sundry items. You may be required to bring in some more expensive food items e.g. meat/fish. The uniform cost is approximately £30.
